Enchiladas de Gringo Flambe Recipe
2 cans of green Chile enchilada sauce
2 cans of Red Chile Enchilada Sauce
12 corn tortillas
6 flour tortillas
2 cups of Mexican style cheese, generic best
2 cups of queso fresco
1 baking sheet 11x13 inches preferred
1 container of pre-made taco shells
1 cup of 40% by volume alcohol
-Take pan and line one side of torn corn tortillas and line pan bottom, create barrier with hard taco shells and line other side with torn flour tortillas. Stack layer of green sauce on the flour tortillas and a layer of red sauce on the corn tortillas. Add layer of Mexican generic cheese to green sauce side, then add queso Fresco to the red sauce side, continue to layer until top layer is cheese only.
-Pre-heat oven to 375 degrees and bake for 20 minutes or until cheese is golden brown and melted.
-Remove from oven and allow to cool.
-Take Alcohol and pour over the top and light on fire, letting burn until the top crisps or until it begins to burn at which point you will extinguish the flames using lemon juice which adds flavor to the top layer of cheese.
